very quick n easy vegetarian burritos recipe

This is what you're gonna need in order to make those delicious lentils burritos that even your meat-eating friends will love. The cooked lentils give the illusion of a meaty ground beef texture in this preparation. It's pretty handy to always have canned legumes and already steamed rice in the fridge. A couple of the ingredients are optional and you will find that the recipe works fine without them. But I recommend usind them.

DELICIOUS FAST N EASY BURRITOS


1) 1 can of pre-cooked lentils
2) 6-8 large Whole wheat or multi-grains Tortillas
3) 1 big jar of your choice of chunky salsa
4) 1 small onion (of your choice but yellow works fine)
5) 1 red capsicum (that's pepper)
6) white or brown rice, cooked
7) salt and pepper
8) any kind of vegetable oil (though I recommend grapeseed since you're gonna heat it up)
9) one pinch of cumin (optional)
10) 1 cup of sour cream or veggie alternative (optional)
11) Fresh cilantro (optional)
12) 1 fresh lime (optional)


First heat the oil in a wok, skimmer or large pot.

Add chopped onions and sliced red capsicums, salt and pepper.

Cook for a while until tender.

Add lentils and salsa and simmer on low fire for about 8-10 minutes (Add cumin near the end).

Pour mixture on tortillas bread and add hot or cold rice on top.

Sprinkle with lime juice and garnish with fresh cilantro.

You can put the sour cream inside the burritos or in a little side dish (ramequin).

Spice things up with hot sauce if you'd like or choose a hot salsa. You can also have a side of guacamole, but this takes longer to prepare. Use it if you have it!

Serve with yams fries or fresh mixed salad and a Corona. Yum!!
